Carmelized Onions and Arugula on Sourdough Carmelized Onions & Arugula on Sourdough
 

4 c. thinly sliced Walla Walla Sweet onion
3 TBS olive oil
8 large slices crusty sourdough bread

Salt & freshly ground pepper to taste
1 bn baby arugula

  1. In a large frying pan, combine onions and 2 TBS olive oil. Cover and cook over low heat 15 minutes. Uncover and cook over medium-high heat, stirring frequently. Cook 5-10 minutes until browned.

  2. Divide the onions among 4 bread slices. Sprinkle with salt and pepper. Top with arugula. Drizzle with remaining olive oil. Top with remaining bread.
