Arugula Salad with Pomegranate Dressing

1/2 lb arugula, chopped
1 Gala apple, cored and sliced
1 seedless tangerine, peeled and divided into sections, the white pith removed
Pomegranate dressing
Seeds from 1/2 pomegranate
Divide the arugula on 4 salad plates. Arrange the apple and tangerine on the plates. Drizzle with the dressing. Garnish with seeds. Serve at once.

Pomegranate dressing
3 TBS Pomegranate juice
1 1/2 TBS red wine vinegar
2 TBS extra virgin olive oil
1/4 tsp Dijon mustard
1/8 tsp tangerine zest
1/2 tsp pomegranate molasses or 1/2 tsp honey
Salt & freshly ground pepper to taste
Whisk the dressing ingredients together.
